 Chilli Con Carne

  • 750g lean minced beef
  • Handful of cherry tomatoes, halved
  • 1 tbsp tomato puree
  • 3 bell peppers (red, yellow and green)
  • Large red onion
  • Knorr kaffir lime and ginger stock pot
  • 1/2 carton of passata
  • 1 tsp Lazy minced garlic
  • 5 drops of tabasco
  • Sachet Tesco smoky fajita seasoning
Heat a frying pan with a little oil, add the garlic and onion and cook until onion has softened. Add the mince to the pan and fry until cooked through, then drain off any fat. Put the frying pan back onto the heat and add all remaining ingredients leaving the stock pot till last.

Reduce the heat and allow the chilli to simmer, reducing the excess liquid for around 20 minutes.

And that's it!! we normally serve it with wraps, rice or in a jacket potato with some cheddar grated on the top.


Chicken Wings Dry Rub Recipe (makes enough for a standard pack of chicken wings)








  • 50g brown sugar
  • 1 ½ tsp coarse smoked sea salt
  • 1 ½ tsp granulated onion
  • 1 ½ tsp mild chili powder (you could use medium/hot if you like your wings spicy)
  • 1 ½ tsp smoked paprika
  • 1 ½ tsp ground cumin
  • ½ tsp ground black pepper
Mix all ingredients together and coat wings. Cook wings as per packet instructions. I normally split my wings at the joint but this is personal preference.
